Dr. Kaufman is strongly passionate about diabetes research and advocacy and is one of the world's leading authorities on the disease. Despite Dr. Kaufman’s imminence in the diabetes and endocrinology communities, the story of her invention of the Extend Nutrition formula is a humble one.  In search of a solution for her patients suffering from hypoglycemia, Dr. Kaufman developed a complex carbohydrate formula in her own kitchen which was later clinically tested and proven to help control blood sugar.
