4 small avocados, diced
2 cups grape tomatoes (halved) or cherry tomatoes (quartered)
1 medium cucumber, diced (peeled or unpeeled)
1 cup red onion, chopped small
1/4 cup fresh cilantro, chopped
2 tsp minced garlic
2 Tbsp lime juice
1/4 cup extra virgin olive oil
Salt & pepper, to taste
1 bag Italian Herb Extend Crisps, crumbled

Combine all ingredients in a medium to large bowl, except the Italian Herb Extend Crisps. Top salad with Crisps. Serve immediately.

*This recipe can easily be made ahead. Prepare as directed, except don't add the Extend Crisps. Cover and refrigerate, then top with Extend Crisps when ready to serve.


This is one of the most refreshing and delightfully tangy salads you'll ever eat. You could throw in some lettuce for a traditional salad, but it's perfect as is.

The crumbled Extend Crisps on top provide extended-action carbohydrates – giving you the crunch of croutons, but without the blood sugar spike of bread.
