Take a dip into this unbelievably light and airy pumpkin spread. It's fluffy, it's sweet, it's irresistible - and best of all, it's diabetes-friendly.

pumpkin fluff dipIngredients:

2 (8 oz) tubs cool whip, sugar-free, thawed
3 small boxes vanilla instant pudding mix, sugar-free
1 packet Vanilla Extend Shake mix
1 15 oz can pumpkin puree
1-2 tsp pumpkin pie spice

Directions:

In a medium mixing bowl, blend together the cool whip, instant pudding and Extend shake mix.

Mix in the pumpkin puree and pumpkin pie spice (more or less to taste).

Serve immediately, or store in refrigerator until ready to use. Serve in a hollowed out pumpkin for more seasonal fun. 

This low-glycemic dip is perfect with apple slices and graham crackers...

...or for a deliciously healthier option, replace the graham crackers with Cinnamon Extend Crisps. Same yummy dessert, but without the blood sugar spike of graham crackers.
