A leading endocrinologist makes a dramatic discovery
ExtendBar was developed by Dr. Francine Kaufman, a leading Pediatric Endocrinologist.
She currently heads the Center for Diabetes, Endocrinology and Metabolism at Childrens Hospital Los
Angeles and recently served as the president of the American Diabetes Association.
Dr. Kaufman was searching for a nutritional tool to help her patients stabilize
their blood glucose level by providing a sustained supply of glucose to the body for an extended
period of time. She was impressed with the research previously done on the complex carbohydrate,
uncooked cornstarch, but noticed that when used alone, 25 grams or more were needed – a level which
often causes GI side effects.
During her research, Dr. Kaufman found that when uncooked cornstarch was combined
with specific amounts of fat, protein, and other carbohydrates, it helped stabilize blood glucose
levels for an unprecedented 9 hours, using a modest amount of uncooked cornstarch (only 5 grams).
Now patent-protected, this breakthrough paved the way for the recipe used to make ExtendBar.
ExtendBar compares dramatically to most other carbohydrate snacks, which typically convert
to glucose in less than 2 hours. Many convert so rapidly, they cause blood sugar to spike. Others with
resistant starches, like Choice DM® and Glucerna®, convert to glucose within 4 hours.
Because ExtendBar converts so gradually, it can offer many benefits other
carbohydrate snacks can not.

ExtendBar introduces a second formulation based on input from Diabetes Educators
ExtendBar recently added a new formulation - ExtendBar Delight - to its line-up based on input we've received over the past year from diabetes educators across the country. Here's how this Delight formula - available in five scrumptious flavors - compares to our Original Crunch formulation.
Both ExtendBar formulas:
- Contain similar amounts of slow-acting carbohydrates (19-20 grams) to help stabilize blood sugar levels for up to 9 hours
- Are low in fat and cholesterol-free, so they are deliciously heart healthy
- Have only 150-160 calories per bar
ExtendBar Delights:
- Contain zero to 1 gram of sugar
- Are high in soluble fiber and protein for those trying to add more of these nutrients to their diet
- Are gluten free
- Use sucralose (Splenda) in place of the fructose used in our Crunch formula
- Have only 1-2 grams of the faster-acting (net) carbs compared to 10-11 grams found in the Crunch formula. As a result, the new formulation won't cause a meaningful rise in post-prandial glucose levels, so it requires little, if any, adjustment to insulin levels.
